New Salzburg MT18 Grain Mill

My new MT18 grain mill is going to be awesome. :-) I looked at several different mills from various manufacturers and I kept coming back to the MT18. I’ve always supported small artist’s businesses and I like the approach Salzburg takes in the design and manufacture of their grain mills.

I also wanted a mill with natural granite stones and a powerful commercial motor with a lower stone speed and the MT18 checks both of those boxes. It is also drop dead gorgeous and will look awesome as a centrepiece in my grain milling workstation. 

I have five Superpails of organic grain ready and waiting, including Hard Red Wheat, Hard White Wheat, Soft White Wheat, Einkorn and Spelt. 

I’m still looking for an Italian “diving arm” mixer to go with the Famag 8qt HH spiral mixer and the 8qt Kitchenaid Commercial stand mixer. I’ve found a few bakery supply companies that have various models in stock, so I need to beat feet and take a look at one. I’ve also found an Italian company that will ship a US configured smaller format model across the pond. It’s going to be a stack of fun!

It will be a honeymoon period, then a drop off in skill and efficiency, followed by despair, followed by rapid growth, the standard skill acquisition curve.

I did not opt for the MT18 because I am not feeding a village and also the kitchen doesn't have an extra 230V outlet.

Please let me know when you get it what type of fineness you are getting at the "red dot" setting. Perhaps do a test of 100g sifted by a #40 and let me know what extraction you get.

Hello,

I will be happy to update this thread when my MT18 arrives. It has cleared customs and is on the way to our post office for delivery. I hope to have it early next week. 

My MT18 is wired for 110v, not 220v… The MT18 is not really that large, only a wee bit over the smaller ones. I’ve always been drawn to larger/industrial, or commercial/heavy duty equipment. It’s just how I’m wired I suppose! 

I particularly liked the faster milling speed of the MT18 over the smaller units. If I get really stuck in with grains and grinding, I will probably buy another mill, but the second one will be the MT18-D that can run continuously, even all day long without stopping. 

I have to be mindful of my space limitations however, as I only have about a 350sqft kitchen. I still have to add a commercial dough sheeter, another blast chiller/shock freezer, a commercial freezer and a large diving arm mixer. It’s going to be a stack of fun! Humm… Maybe a dedicated bread oven as well…

Hello,

My MT18 grain mill arrived this afternoon… :-) It was packed well and it survived the long journey in good nick. I’ve only had time enough to assemble it and make sure it works. The motor is very quiet when running. I can’t wait to get it fully setup and grinding grains!

So how do you like your MT 18?

My MT 12 arrived yesterday after a week in U.S. Customs. I haven't used it yet but am stunned at the quality; honestly, it makes my Mockmill Professional 100 (no longer available) look and feel like a toy. I haven't used it yet but I'm sure I'll love it.

Mahalo for your post… I’m just getting back from two weeks on Maui celebrating our 40th wedding anniversary and I’m still jet lagged… Our stay at Four Seasons was epic as usual…

There were a plethora of flight related delays on the way back and I’m still trying to resume my regular schedule. Give me a couple of days to clear the jet lag and I will give my initial impression of the MT 18.

Hi Rosso,

I was curious how your MT18 is doing, does the produced flower come out pretty warm or is it cool?

Did they wire it for you properly with 110v for a regular US power socket?

I've only been in my new house for a few days (after waiting for two years), so I'm not milling or baking yet. Don't worry--I'll post impressions as soon as I do.
