Do you use the kind of buttermilk with gums and starches?
That's the only kind I can get at the local Kroger. And it makes my soda bread and biscuits gummy and sticky. Even the "full fat" version has gums and starches added, but it does seem less gummy than the fat-free buttermilk.
I'm going to have to start making my own, using active-culture yogurt, or gummy buttermilk, as a seed to innoculate regular milk.
