Latest Loaf: HRW / Eikornn

A loaf I baked for a friend at our local Eagles club. Mix of 50/50 HRW and Einkorn. Hydration is 70%

While I love the rich and earthy flavor of HRW, the Einkorn "gentrifies" it, adding a sophistication that tastes like it came from a bakery.
