Description

I modified a recipe from sourdough home.com to make these Kaiser rolls.  They are great burger buns.

Ingredients

210 g
water
280 g
starter (100% Hydration)
2
eggs (beaten)
670 g
AP flour
2 t
sea salt
2 T
Sugar

Instructions

Mix all together, knead 5 mins, rest 5 mins, knead 5 mins.

allow to proof - mine was about 6 hours on the counter top and then overnight into the fridge

cut into 12 108g pieces and shape -keep upside down on parchment to proof (about 2 hours)

Bake 425df 15 minutes or until golden brown - these freeze well.
