Starter get sourer?
I make buttermilk sourdough bread once a week, refreshing my starter the night before I bake. In between times, it sits in the fridge. Does it get sourer as it gets older? It smells a little stronger this week, not much, but stronger than before; it's very healthy, still bubbly.





im really not a pro,but! I saw a film on breadtopia. I believe I saw this guy take a tablespoon of the strong mix he had [sourdough starter] put it in a clean jar with a 1/2 cup of flour alittle water [bottled] & start a new fresh batch & build it up the following day to bake with. this I believe takes alot of the sourness away. also I saw him pour off the hootch clear liquid in top. does this before he adds more liquid & mixes it. If u can , Please tell me how u make buttermilk starter thank you hotbred Your mix sounds like a good one to try!
