New steam boxes

just got a set of these bbq steam boxes. They’re Heavy seasoned cast iron. little smaller than I expected but that might be a good thing. 

Not sure what the best orientation would be. But I guess that depends on what I’m baking.

thanks for sharing!  With a quick wash, I can double use this ash catching tray for generating steam. It rests on two screws and is stainless. Note the seal around the edges, mine leak but not too much.  Might be a good thing for lots of steam.  Gotta test it now.  Do you get any "wave" motion when moving the rack?.

I bet you get more added flavour off your boxes if they've spent time in the grill.

A great little wood burner. Wood at least 3 years old and junk mail.  Hubby made the tray.  :)

james, where did you get them? They look like a perfect size.

I have a Rofco Steam tray that is about that size, but they aren’t cheap. Rofco uses rods inside the container. You might try rebar cut to size for a heat sink.

They’re pretty hefty and come with a lid too. I can probably tilt the lids in there for more mass but I’d don’t think I would need to. 
will try with towel and without to see if it makes a difference.

That looks like a great setup for home steaming James.  I’m interested in hearing how it works out for you?  Will you be putting anything inside each of the boxes or just pour water into them?

That exactly what I've been using for the past several (8?) years.  They came (via a Pottery Barn gift card, if I recall) with perforated lids that I keep on them in the oven.  I filled them with lava rocks and have the sides of my steam curtain hanging down just above them (the trays made their appearance shortly after that "New(ish) steaming method" post).  Water drips from the curtain down into those trays and ... no shortage of steam.

These were from amazon. Man Law BBQ grill humidifiers. $30 for the pair. Haven’t used them yet. I’ll be using them with my whole oven cloche / roasting pan. I think I probably only need one for that setup.

Rofco trays also have strips of rebar in them and a trough at the top to distro the water evenly over the bars.  The result is a quick burst of steam you can trap.  I would reccomend placing lava rocks into these for a similar action.  If not the water will just slowly simmer with maybe a little burst when  it hits the hot metal.  Nice thing here is a. you have a nice thin tray that doesnt compromise too much space and b. you can actually purchase these as Rofco stuff is sold out everywhere.  I was lucky enough to have begged a company to hunt their inventory.  Love to see how these work out.
