Micro bakery

Can anyone share the sq footage of their micro bakery?

I'm looking into building a room in my garden / backyard to use as a dedicated bakehouse.

Currently thinking it'll be around 2.4m x 3m (7 x 10ft).

Is that too tiny?

Do the dimentions include the oven?

Hi Mini Oven.

That's just the dimensions of the space. Oven will go into that.

Perhaps a mixer, will need proofing and shaping space (and cooling too)

flour dust and heat and steam will compete with you for air.  Cooling racks too!  Consider ventilation and storage space as well.  Fridge?  How much do you plan to bake in a day?  Flour dust is very hazardous.  Urban area? You should not contaminate the cooling area with raw flour.

Thanks for the comments.

Yes a fridge.

Probably 50 loaves max.

Suburban area/Village

Can do separate cooling area.

Thanks for all of this.

Is there a guide or guidelines already on paper somewhere?

That's a very good question.  Have you tried site searching ... starting a micro bakery?
