Thanks for posting this. An extremely high quality blog. Visually well done and expertly written. I live in a city, Milwaukee, that was the largest exporter of flour in the world in the late 1800's. There was a grain exchange where the global price of wheat was set on the trading flour. The Rye Baker has a recipe for a bread made here in the day, but I know so little about the earlier history of bread. Look forward to following it.
