These cookies are called Easter Cookies, they are prepared using Semolina and spices, and Ghee or butter, lots of Middle Eastern Spices are added as well.  the cookies are prepared, the night before , rolled and left on a cookie sheet all night cover with clean towels, and baked the second day.
