How long to knead? (I do autolyse and S&F)

How long to knead? (I do autolyse and S&F)

I do mainly wheat sourdough bread. All works well, but how long I should knead? I have a Bosch kneader.

My timings are:

  • 30 min Autolyse
  • ~5 min Kneading
  • 3-4 Stretch+Fold every 15 Minutes

I wonder if my ~5 min machine kneading is to long/short - or even required?

You're going to have to provide more information for people to help you!

What recipe/formula are you using for starters? You say wheat, but what kind of wheat. Whole wheat? White (wheat)? What hydration? What kind of bread are you trying to make?

My starter is normal standard. Pre-dough is ~25%. Starter in pre ~15%. Flour is wholewheat (unknown ash, over 800 I guess), hydration 90% (because of 30% oats)

I do now 2 min slow, 2 min fast. 

I don't think it matters too much, but the autolyse seem to significantly reduces knead time.
