Split issue from cut side when customer press bun

Hi.. my name is umair from pakistan.. we are making cut burger for restuarent...issue is split from cut side when customer press bun for eating...

Working.....

  1. Cut before proofing
  2. Dough tight in mixing because cut mark
  3. We use bread improver 0.14% [according to flour]
  4. Water is 62%...[according to flour]

Hi Umair can you give us a bit more information to the problem and perhaps a picture of the problem, is the bun splitting along the seams of the plait? if so that is a natural point of separation where the dough pieces overlap. Is the dough an instant dough?

  1. split problem from this top side where we are making cut mark (customer requirement).

We use fresh yeast, 1st we make sponge then after 2 hrs we make final dough

I don't think the problem is to do with the formula, its the style of bun,  being plaited or is it a  double knot.  The separation of the strands is a natural  split line and with the bun being sliced in half for the burger the strands are separating more easily with less structural integrity along the strand  edges especial  if pressure is applied in gripping a big plump filled burger. This will be magnified if the  dough strands have any flour or oil film   or even skinning prior to tying/plaiting. We used to make small  knotted dinner rolls and invariable patrons used to tear them apart  rather than using a knife and they came apart along the strands too.                      If you  use exactly the same dough and make a plain round bun and treat it exactly the same and then slice it fill it with the same burger patty etc  and handle it with the same pressure its not going to split  as there is no weak points as it is a whole rather than segmented.  Has this problem only just started  to occur where it has not been happening before in the past or is it a new customer, and new order?

Yoz, I concur, it sounds like the seams on the upper side are separating. How to solve it, I don't know.

Sounds and looks like a commercial setting.

Yes it does sound like a commercial setting  especially with the packaging might have got a better view out side the plastic.
