Hi from Scotland

Hi all,

I'm a longstanding lurker, but being mostly stuck at home has given me renewed enthusiasm for regular breadmaking.  For kicks, I'm doing a mini Bread Bakers Apprentice challenge to see me through. I've made it to the Wild Mushroom Ciabatta in the past 2 weeks, but I really need to start feeding people again or they won't be able to remove me from the house!

Next up is cinnamon rolls, which I really don't need, so I thought I might skip ahead to some French baguettes...

I’m new here, too.  The Bread Baker’s Apprentice is my favorite!  I read it like other people read novels.  I never thought of starting with the first recipe, and doing them all consecutively.  I have just skipped around.  I love the cinnamon roll recipe, but I prefer my frosting recipe.

Yeah, skipping around is seeming a bit more sensible just now... On the plus side, it made me make the anadama bread, which was a really good surprise!

What's your frosting? I have no firm allegiance to any yet.

Anadama Bread is fabulous!!!  There were a few recipes in the book I wanted to try, but had to wait until I could find powdered diastatic barley malt.  I had to break down & order it online.  Now, his Italian Bread recipe is another one I find myself doing over & over again, much like the Anadama Bread.

My frosting recipe for cinnamon rolls:

1/2 cup butter

1&1/2 cups powdered sugar

1/4 cup cream cheese

1/2 tsp vanilla

1/4 tsp salt

Combine ingredients in a bowl & beat well with an electric mixer, until fluffy.

 

Many in my household like a lot of frosting, so I double it & leave it on the side with an ice cream scoop in it & everyone can serve themselves.  Another habit I have, is to double the roll recipe (quad the frosting) and then when the extra rolls become too stale, I make bread pudding with them & mix the left over frosting into my egg custard.
