Steel cut oats, Flaxseeds, whole wheat, dark rye, kamut, herb de provence

Medium hydration, about 72%, 48 hour retard. 

Tall, and fine crumbs! Perfect for sandwiches!

I love the look of the seeded outside - well done! Is this 100% whole wheat/grain?

It's a tad but under 50% if you count the oats too?The rest is bread flour for the lift.

I added salt form the get go so it wouldn't go over fermented and turn into a massive bowl of starter!
