Bernard Clayton's hearty white bread
I modified a few things to make it vegan and added jalapenos and banana peppers. I used cashew milk and grapeseed oil for the vegetable oil. No sugar. Went heavy on the steam action. Baked on bed of wheat bran on the stone.

Bernard Clayton's The Complete Book of Pastry is an excellent book as well. I highly recommend it to anyone interested in pastry. Used copies are cheap.
