After not having much success with the recipe from BBA, this recipe was a revelation. My previous ciabatta doughs were way underhydrated!

Am definitely going to have to try that recipe. Your crumb looks yummy.
I just pulled two loaves of the BBA ciabatta from the oven and while the bread tastes good, I should have baked it about five minutes longer and hydrated it more. While I did add more water than the recipe called for and added five minutes to the published baking time, it needed more of both.
My first try with ciabatta and I heat with wood so my house is always quite dry. Maybe someday I'll figure out the percentage of hydration I have to add to make up for the very dry air.
