Any recommendations on a second countertop oven for baking in my home?

You Betcha! The Breville countertop series is superb. Mine has supplanted the big oven (of course this is a two-person household). Convection, temperature control and all-around quality  are compelling advantages. Can handle up to 12 inches deep, but sadly, no baguettes.

But beware; their customer service is appalling. I bought a mid-size one and tried to make toast. After 3 max cycles the bread was rock hard and still white. Customer service assured me this was the way sourdough bread toasted and refused to replace a brand new unit. I was glad of Amazon's return service.

There is also a larger Breville that can hold a dutch oven, but it is a lot more expensive

I have what is now the Breville mid sized oven.  If it conks I’m getting the new biggest one with three racks.  I tend not to bake bread in it but I bake everything else in it including a good sized pizza and it makes great toast.  In a hot climate heating up my big oven is a no go in the summer.  My Breville stays in the laundry room with the door shut.
