video demo
HI THERE. - New to this site and have found it terrific. While looking through some instruction I came across a video demo by a gentlemen showing a folding technique spaced at 45 minute intervals. Now looking at the site again I can't find it. HELP. Didn't catch the name of the one who posted. I'd appreciate finding that again as it shows working the dough in a way that's good for people with wrist injuries.

YEP! THAT'S THE ONE. I was recently at a week long baking class in NC and one of the students had a significant injury to his wrist which definitely hindered his work for the week. I also have carpal tunnel and this technique is great - much less stress.

I tried finding it for you..because it was such a great demonstration of technique and easy to follow, a great learning tool. Put Mike Avery into the search box. You will get a wealth of info!
