New favorite breed of ducks

So bread dough is basically half Einkorn and half wheat (?) sourdough. Amounts are left to guess other than 6 cups of each flour and mixing the dough cannot be observed as the camera is below the bowl edge.  Interesting bowl.  Walnut meats are broken & soaked (not sure if roasted) added during the mixing.  No mention of salt. Dramatic and fun chugging of maple syrup.  Flour cup/scoop looks small and is scoop and shake method of filling.  After a short 15 min pause for the flour to hydrate, dough is quite stiff when shown.  Not sure what kneading is done, a stiff folding is shown, and the dough is quite stiff.  So looks like a no-knead low hydration.  Lots of bench flour (AP?) used.  Beginners may have trouble estimating this recipe.  Kamila, you have strong arms!

Would please like to know the size of the cup (metric if possible) see the dough being mixed and know approximately the amount of water, salt and levain if possible.  

Music and atmosphere is pleasant but video is more basic method than recipe.  I could use more details.  A tripod for the camera might help.  :)   I smiled when the camera straightened up by itself and love the natural comments from helpers.  :). A lot of work has gone into the video, thank you..
