SFSD by Michel Suas

Has anyone baked the Suas formular for SFSD? It is very different from most variations. Advanced Bread and Pastry page 201 (215 of 1058 - pdf version)?

Btw - the kindle version is only $3.  https://www.amazon.com/advanced-bread-pastry-Michel-Suas-ebook/dp/B01FRD16Z2/ref=sr_1_1_twi_kin_2?ie=UTF8&qid=1549629241&sr=8-1&keywords=advanced+bread+and+pastry+by+michel+suas

if the recipe you are asking about is one of the ones we did in the SD1 class at SFBI. I will have to look again.

BTW, the book is superb, if you are able to decipher it. It is not a straight forward home baker guide. Although I like it and use it, and the recipes I've tried worked fabulously, it's not for the light-thinker. The recipe for coconut macaroons produces one of my favorite cookies of all time.

Hi, Dan.

I have baked this bread many times but not for a while. It is good but not great, in my opinion. It is not as sour as most folks' notion of SFSD.

This was my go to bread for a while but has been displaced by variants of Ken Forkish's breads.  I like the higher hydration and higher percentage whole grains in my breads than when I started sourdough baking.

My favorite bread of Suas' isn't even in his book. It's the miche we baked in the Artisan II workshop. I posted the formula some years ago. Here it is: This miche is a hit!

Happy baking!

I just checked and it is indeed $3 US for the Kindle edition (drat, I paid $45 US in Jan 2018).  However, that does not mean that it is similarly priced in any other country at this time.  I've seen this before when I tried to buy a kindle book from the Amazon UK website and was told that I can't because I was not located in the UK.  Leslie in N.Z. also had a similar problem, as I recall.

But it's not letting me buy it on the iPad, Alan.

Hi, Danny:

The PDF deal is excellent, too! If I use the iPad to buy and download the PDF file, can I transfer it to a PC later, or vice versa? Thanks!

I think so, Yippee. The file comes as an internet download. I was able to save it to dropbox.

I did have to download the free version of Adobe Acrobat Reader to utilize bookmarks, comments and other features in iPad.

This is a great deal and from all indications it is legal. I did my best to research the legailty.

They may have stopped offering it on Amazon, but see ebay link above. It is definitely good.

Looks like the standard formula to me.

If I can find it, I'll link you to some academic literature that details a similar process implemented by a well known bakery making SFSD in its heyday.
