Hi from sunny Africa

Hello all,

Checking in from my new adventure in Mauritania. We've been here for a year and a half and I accepted a job running the pastry, baking part of a business over here. It's fun and challenging. Nothing is very easy since we don't have easy access to top quality ingredients and the weather is difficult. But we make some really good products and they are gradually getting even better! Looking forward to discussions with you all.

Thanks! The problems I have are due to the HEAT over here and the lack of ingredients. It limits the possibilities, but it's kind of fun to try and find solutions to everything and make the best possible products.

No wonder you have temperature control challenges (saw your croissant question).

Ha ha ha! Yah, sunny and hot. And right now it's the cool season. In September, it's over 40°C every day!

I think ice is the only solution.
