Happy New Year!
Stan's Swedish crispbread calls for "coarse rye meal". Is it = pumpernickel flour by KA? Thanks.
I am not familiar with KAs pumpernickel flour, but Stan published this photo of what he means by various rye designations. To me, the photo of coarse rye meal looks like what I have seen called “rye chops.” Apparently there isn’t the same consistency of nomenclature in the rye world as there is in wheat flours. Hope this helps.
But you can as Breadforfun said, get rye chops. KA sells them, here's the link: https://www.kingarthurflour.com/shop/items/organic-rye-chops-2-lb
What we call Cracked Rye and after comparing the photos Brad has posted a link too I can confirm it's what The Rye Baker calls Coarse Rye Meal.
So many names for the same thing. It's confusing. But thank you for the question as this has made me realised I do have coarse rye meal and can try more rye recipes which call for it.
to order now as I need to make this for my son who's going back to college on Saturday. I can probably grind my own rye meal/chop (what do you think?) but I will do it next time. For this bake, I will use the pumpernickel flour instead. Thanks everyone for your response.
...if you have rye berries. I have done it in a Mockmill and prior to that on a KA grain mill with a coarse setting. Good luck.
I just tested the KA grain mill with some berries, and I like the results. Now it has its job back in my kitchen. Thanks again!
Lately I've used my Vitamix to grind whole grain rye flour. And I've completely forgotten about the KA grain mill😛😛😛. I didn't like it before because its grind was too coarse even at the finest setting. But it may be the perfect helper for today's bake! Thanks for the reminder! The KA pumpernickel flour seems too fine for the job.
fine at the coarsest setting:-) So I use my coffee grinder for Medium to coarser grinds of grain. Glad you found a fix. Your son is going to love the crackers!
