Bloating

I have been baking bread for about fifteen years now.  Over the years I have learned the hard way that when I eat whole wheat bread I bloat.  I now bake a white loaf using a long rise method and do not have any gut issues.  Last night I found an old recipe I had for no oil muffins.  This recipe is flour(white), baking powder and soda, salt, applesauce, maple syrup, and water.  I ate one of these muffins after supper last night and shortly afterwards blew up like a balloon.  I tried sleeping but woke more bloated and extremely uncomfortable.  Two A.M. and here I sit wondering what caused all this.  I have no trouble with my white yeast bread.  Could it be the baking powder and soda?  Or perhaps it was caused by short processing time.  Comments appreciated, thanks.
