Wheat & Rye. Always a good combination.

Wheat & Rye is always a good combination, makes a nutritius and beutiful bread. In my opinion this is also an excelent kind of dough for making nice scorings and decorations.

I certainly agree about mixed grain breads for their flavor. I never thought about any advantages for scoring. What percentage rye do you favor?

Usually between 70% wheat 30% rye and 60% wheat 40% rye.

good call - all my breads tend to be mixed grain and wheat and rye is one of my most popular...rye is like the foundation to all my breads...and @abelbreadgallery your loaves look delicious
