I work in a bakery!

Finally, I work in a bakery.  I mentioned this a while ago and I got hired for two days a week.  (My regular full time job is a week-end job.)  I just want to say that I am loving it!  A couple hundreds of loaves passed through my hands today.  Seriously, I am highly motivated.  All the money I make is actually saved for buying a new oven (with baking stones inside.)

The oven is the master piece of the bakery!  It is a brick oven, and can burn with wood, gasoil, coal.  It currently uses gasoil.  I will ask the baker if he allows me to take a pic, so maybe I can post it over here when I get permission to take one.

Most of the doughs are straight doughs.  No sourdough, which is too bad.  Also his baguettes are not that good.  But that is about the only negative I could think of.  I really love it over there and I consider myself lucky to have found such a great place to work.  I hope to learn a lot and develop my skills.

That's wonderful news. I hope your experience only makes you love baking more. With your kind of passion, you are sure to have a bakery of your own some day.

It is pretty much all artisan bread baking.  Only one kind of bread that is made into boules with a machine.  The baker told me that people nowadays want bread leavened in baskets.  It used to be different.  He has a bunch of baskets, in fact, we made two batches this morning.

 

Also what is cool is that I start working at 6 AM.  No night shift!

Oh well, I do need to say that because of my regular job after my 12 hour (weekend) night shift I stopped and went straight to the bakery (which is very close to where I work)  to work for another six hours...  Monday I did not get into bed before 7 PM and I was awake for about 29 hours.

But I don't mind...I love baking!

Bart-- I just visited your blog and you make some of the most beautiful breads I've seen.  Thanks for the English!  It would be great if you included the recipe for the Belgian Brioche!
