How much dough to fill a proofing basket ?

How much dough to fill a proofing basket ?

Is there a way to estimate this?

I have a batard basket 15" x 6.5" x 3" high at top (12.5" x 4" at bottom)

I have a boule basket 10.5" diameter x 5" high at top (7" diameter at bottom)

Any guess as to how much dough to fill these, with enough room for dough to rise?

A ten inch round basket will take approximately 2 to 2.5 lbs. dough according to the SFBI.  

Or did you want that in metric?  0.9 kg to 1.2 kg dough. Or at least 550g total flour in the recipe or about a generous 4 cups of flour recipe.

The oval one is about the same size.  Line both baskets with a plastic bag (or use the same bag of water) and see how they compare filled liquid.  The loaf from the oval one will bake faster.

As Mini points out, these are large bannetons.  You want enough dough to fill the bottom portion and use the sides for some support.  You do not want so much that the dough rises and spills over the edges.  The SFBI figures sound about right.  I have a couple of round bannetons that are about eight or nine inches across at the top, and they comfortably hold dough that results (after baking) in weights in the range of 500 - 850 g.  My oval banneton seemed small when it arrived (9.5" x 6" at the top), but holds a similar loaf.
