Bagel Oven

Recently started a bagel business vending at farmers markets working out of a support kitchen. We kettle boil them and bake them. The setup we use in the support kitchen is not ideal, but we still get fantastic results. We currently use a combination of ovens; A non-convection oven and a hi-temp open flame gas powered pizza oven with a rotating stone. We are looking to open a shop and our biggest quandary is, what type of oven should we get? I know they make ovens specifically for bagel making, but they are enormous and costly. Will a deck oven work? One that provides bottom and top heat? Thanks
