Today the starter is looking real good.
It doubled in size overnight.
I'll probably try baking with it tomorrow.

Your deluxe sourdough sounds really good, but for a first loaf I want to stick with something simpler so I can focus on the performance and flavor of the starter. I suspect I'll start with just a sour french bread.
