I'm In Cinci Ohio. I'm a new bread maker. I am using Flour, Water, Slat, Yeast by Ken Forkish. So far I have only made the overnight white. Me and my family love it and the overnight part fits my schedule nicely. If anyone knows how to adjust the overnight white to make rye bread I would appreciate a reply.
