Hi, nice site you have here.

Made a rye sourdough starter last week... Didn't follow any particular recipe, just observed and fed until it started happily bubbling away. First attempt at a loaf shown. Proofed overnight in the fridge, baked in a Dutch oven for 35 mins, then 25 uncovered at 230C fan oven. Great crust and pretty tasty. Crumb could be a little more 'holey' - what do you think - slightly longer proofing time?

I think it's the perfect 'holey-ness', myself. Just enough to hold toppings without them all leaking through. :)

I just joined this community, but i've been creeping on it for the last few years. I'm going to be leading a retreat (including a baking workshop) in UAE in February, so it's very cool to see there are some artisan bakers there. I was wondering if rye flour is available there, but it seems you've answered my question! Happy baking!

Hi, sounds interesting... yes everything's available here. The bigger supermarkets stock all your rye/spelt/whatever.

your bread looks really good. what part of the uae do you live in? my son, daughter-in-law & grandsons live in al ain, adu dhabi.
