This is my first visit to The Fresh Loaf. Wonderful site.

A quick question though - is "all purpose flour"  in many of the recipes the same as UK strong flour (high gluten content).

All purpose would be equal to "plain flour" in the UK.  The protein content and equivalent in other countries is found here http://en.wikipedia.org/wiki/Flour .
