Photo looks like a "Jackie" non-obtrusively waiting.  I wonder what they're thinking when focused in the distance?

 Traditional Plum filling?   Mmmmmm!

Focused on other things but I'd bet he was thinking how much he hoped I'd drop a bit. 

I can't remember the flavour, have a feeling it was a non traditional strawberry jam... I do remember it was delicious! The shaping videos are going to come in handy, I've seen them now.

What hydration do you suppose the dough in all those shaping videos is? It all looks so easy! I'm thinking maybe 67% - ish?

Always make things look so straight forward, I however usually make simple tasks look hard!!

I think you are probably right on the hydration level, looks an extremely user friendly, tactile dough.

my doughs rarely seem so smooth and easily handled, they seem to just stick to the bench and bench knife even when floured!
