Do you have an idea of the recipe to have the bread in the video?

Hello Everyone,

Do you have an idea of the recipe to have the bread in the video? It looks chewy, fluffy and has very open crumb.

Gluten structure is really different than the breads that I bake.

Bread or AP flour

What kind of breads do you normally bake?

is too much gas and not enough bread.   All crust and little crumb to speak about.  Looks tough and chewy.

Lol - I don't mind some holes with my bread, but I do like some bread with my holes! Don't know what that bread is called, but you can get that by simply not handling the dough much, if at all, and developing gluten to the max. Good gluten development + minimal handling = holes to big for me.
