I'm searching for a recipe for my Zojirushi that uses 100% freshly milled spelt flour with no added milk, eggs or gluten. If you can help I'd be most appreciative!! Thank you.
Hi - here is an ingredient list:
3-3/4 c. Spelt Flour
2 Tbsp. Honey
1 tsp. Sea Salt
2 Tbsp. Butter or Oil
2 Tbsp. Milk Powder (Non-Fat Dry)
1-1/4 c. Water, room temperature
1 Tbsp. Yeast, Active Dry
The full recipe is on the web site for Bob's Red mill. Just search for "spelt flour" and scroll down to the list of recipes it's used in. They are focusing on gluten free recipes ,now that they have a separate dedicated facility to produce gluten free products. So I'm told there are more recipes coming in the future.

Produced the bread last night, and it came out very dense. I watched it in the bread machine, and it always looked like the dough was too wet. Any suggestions? I am using the Zojirushi.
Should the butter be metled?
I am trying to make spelt bread in my bread machine. So far I've made two loaves using the above recipe. Both times the loaf rose nicely, then collapsed during the last 30 minutes of the baking cycle. Can anyone diagnose the problem?
I tried a very similar spelt recipe and it also collapsed. Let us know if you have figured it out!
This is a pretty simple recipe. I have used in with My Toastmaster Bread Machine. It makes a delicious Bread with a Nutty Flavor:
1.4 Cups Water3 Tablespoons Olive Oil3 Tablespoons Brown Sugar2 Teaspoons Sea Salt4 Cups Whole Grain Spelt Flour1 Tablespoon Instant Dry yeast
I figured out that for some reason my recipes calling for 1 TBSP of yeast were suddenly only needing 1/2 TBSP. That stopped my rising and falling! I no longer have to do spelt bread w/o dairy or eggs--my dd lost most of her allergies and I've had acupuncture to cure my dairy allergy. It's been such a huge blessing! Thanks so much for the recipes--I'm saving them just incase!
