Tartine Sourdough 80% Hydration!

Simple everyday loaf. 

Recipe:

780g bread flour

20g wholewheat

40g rye flour

80g spelt

100g starter @100%

730g water

20g salt

--

7 stretch and folds. Shape, retard overnight, proof, bake 450F for 25mins covered and 25 uncovered.
