Cotton bread bags...

Has anyone used cotton bread bags ? Do they really keep bread fresh....do they keep a crisp crust on the loaf for longer...Is a bread box as good or should I use both. Have been using a plastic clip box but think there might be a better way...

But found my loaf was literally hard as stone by the following day. Unsure why as the reviews for the bag were generally good but I've never gone back.

I am about to try it, I am defrosting half a loaf, I will refresh it in the oven in the morning so I have a crust on it...will post how I get on...fingers crossed.

bread depends on the type of bread and the weather conditions, namely season, humidity and temperature.  A bag creates a barrier and you must decide what comes between the bread and the environment.  Ask yourself if you are keeping moisture in or out?  Do you want the barrier to "breathe?"   How much "breathing" do you want?  Then chose   the material.  

This barrier can also vary throughout the year, change from season to season,  and even from day to day or during the day.  Every location is not the same and conditions change.  

First, a crisp crust and a moist crumb are in conflict with each other from the start.  As soon as the loaf starts to cool moisture will move from the inside of the loaf to the crust.  An exposed surface to dry air will remain crispy ... and eventually dry out the inside of the loaf as moisture is pulled to the surface.  

Some kind of compromise will be needed if kept longer and this may include the addition of a toaster to crisp the crust.

You have explained it perfectly mini...Thank you. I refreshed my half loaf in the oven waited till cool cut the first slice off because it was crispy then stuck it in the bag and put it in my vented bread box....by lunch time my crispy top had softened ...Tomorrow I will be baking a new loaf so will just try sitting it in the bread box without a bag and see how long it stays crispy...I see the loosing battle now...lol. But hopefully it will keep for a couple of days and my new bread box looks better than the plastic box I was using...lol
