HI all,

 

Here is the classic Italian bread. I followed Peter Reinhart recipe.

Those who try different recipes to make classic Italian bread. These are the texture and the flavor of the authentic bread you are looking for! Loved it!

I baked it on the special Italian loaf pan by USA Pan. Its a great pan for this bread.

...and the result was superb.  I may leave out the sugar next time though.  Just thought I'd let you know :-)

I also like to experiment with changimg recipes here and there...let me know how it comes without sugar.

.....much better for you I'm sure.  Superb results again so now​ onto the wholemeal version.

I am using my sourdough starter for the biga and yeast for the dough - I'd like to convert it to 100% sourdough and leave out the yeast - but that's for the future :-)
