Is this Safe to Do?

I'm looking at a recipe for a dough containing milk, butter, flour, salt, honey and yeast. The instructions are to leave it out at room temp overnight and allow it to overproof. Details below.

Is it safe to leave pasteurized milk at room temp overnight? I would have thought that nasties might grow.

  • 1 cup milk
  • 1 tbsp butter
  • 1 tbsp sugar or honey
  • 1 packet (2¼ tsp) dry yeast
  • 2 cups flour
  • ½ tsp salt

Go ahead, but cover the bowl.

in any event.  Chance are you won't have any significant microbial contamination anyway.

with that much yeast.  As it ferments, alcohol will be building making a hostile environment for little nasties.  

I wouldn't worry about it.  What do you do with it in the morning?  :)

Very similar, I remember mom making the batter leaving it on the counter before we went to bed.  :)

I guess you have not been reading up on the microbiome lately.  You have literally trillions just in your intestines. This colony in itself would weigh as much as your brain. You have them in your blood, in your eyes, on your skin, in your nose and mouth, literally everywhere.  They are more in control of your body than you care to admit. 

Creepy, huh?  Look up Microbiome, Microbiota, and Microbial colonies. It may even explain why people are obese.  There has been a lot of study being done in the last 10 years. It is being realized that these are what actually keep you alive.

Now, what makes you sick is a much larger organism such as a bacteria or virus and some that you can actually see such as mold.  Thankfully the good to bad scale, for the most part, is heavily weighted to the beneficial side.

In the short term, when the ingredients as listed, are all mixed together, I suspect that none will facilitate the growth of anything harmful in a short time.
