Yeast packets

After opening a yeast packet does the yeast start to degrade?  I don't always use all of it and just fold it up and clip it.

Hi there,

I live in the tropics and it seems that heat does slow down activity over time. I usually keep it in the freezer and haven't had problems for at least 18 months.

Cheers,

Sander

I close the partially used envelope with a paper clip and store it in the fridge. No problem maintaining freshness. To me, it's no different from putting the cap on a jar of yeast and storing it in the fridge.

I buy dried yeast in 100 -> 500g packets and transfer to a small kilner jar. Not had an issue with it degrading, but I get through it relatively quickly though.
