Hot cross Buns

My timing was out, had to shape when I should have been cooking dinner so no cross!  

Used Hamelman's recipe from bread, scaled to give 20 buns at about 80 gms.  ready to proof.

The only changes were to replace peel with cranberries and similar amount of raisins, reducing currants a little and my own spice mix (don't remember where I found this recipe)

Those buns look fabulous, even without the cross, and I know that they must taste incredible with that spice mix!  I love the size that you chose - that's perfect to be satisfying without being "too much".

That actually is pretty close to my favourite spice blend for all fruit or squash based quick breads / muffins / buns - except I often will throw in some cardamom, too (would be 2 parts in the mix).

Addition of cranberries sounds interesting. I had wondered about that option for the non raisin lovers in the world. That is a great recipe. Our church has  baked 40 dozen hot Cross buns as a fund raiser for the past six years.  We use the same recipe except we sub orange zest for the candied orange peel. This is a picture of our efforts.  We mix them in a batch of 4 dozen.

phew, a batch of 4 doz! well done, a lovely thought as a fund raiser :)

I poured hot water over all the fruit and left to soak for 1-2 hours. I mixed it in after gluten formation.  I like the thought of orange zest, will make a note for next year or if I make another batch :)

We mix the fruit in with the dry indgrediants, mix to distribute and then add the eggs and the sponge. We tried adding the fruit during the gluten formation but found the fruit didn't get distributed as well.

really would have stood out!  Still they are reatty tasty without the extra sugar:-)

I didn't mean to bake quite that brown, but still, they are tasty and we are enjoying them. I agree the cross would have been good! oh well maybe next time I will get it right.
