Zaatar W Zeit wrap bread receipe?

When I was in the UAE, I happened into this restaurant for a quick bite to eat.  I had a wrap in a wonderful tasting wrap 'bread'.

Does anyone have the recipe or something similar for this wrap which I believe was made with the 'multicereal' dough?  I'm assuming there are some 'local' grains and spices that aren't common in the USA so, I am at a loss for how to recreate it and what I would need to buy to attempt to make my own.  I assume the namesake spice is used but, what types of flours or grains do I need?

Here in los Angeles there are Persian markets on every other corner and ingredients for zaatar are readily available (sumac is one for example) its absolutely delish !

I'm in rural East Texas so, my local options are all Tex-Mex or classic "cowboy" things like chicken fried steaks, burgers, BBQ, etc. and chains in the larger towns or random buffets.
