Skillet honey corn bread take IV

To my honey corn bread recipe I have upped the jalapeno from one to two. Not a lot of heat from these peppers up here in moose country, but they added a nice crunch, as did the corn kernels I added. The final add was old cheddar diced fine.

Skillet honey cornbread with 2x jalapeno, diced sharp cheddar and corn kernels. My best corn bread ever!
1/ cup corn meal
1/2 cup flour
1/2 tsp salt
1/2 tsp baking powder...
1/4 tsp baking soda
2Tbs sugar
Mix dry ingredients.
beat 1 egg and add to 1/2 cup buttermilk
add 2 Tbs liquid honey and mix
Add wet to dry, then 2 Tbs melted butter, which I also use to coat the CI pan.
Bake for 16 minutes @ 400F, turning half way.

This bread has a nice sweet taste. The jalapenos bring no heat, but a nice crunch to go along with the corn kernels. My best corn bread yet!!!

Cornbread is the best, and when it contains jalapenos, corn and cheddar, it's THE BEST! A light spread of soft butter is all that's needed for a treat that can't be beat. Thanks for sharing with us!

when baking cornbread, I like to preheat the cast iron pan in a very hot oven with a little fat, pull it out and quickly add the batter. It creates a beautiful, caramelized crust! looks great, thank you for sharing

Agreed! I usually get a pat of butter crackling hot in the cast iron on the stovetop, then pour the batter in and let it get nice and crisp for a few minutes before moving it down to the oven. Especially when there's cheese in the batter - it's like the very best pan pizza crust. To. Die. For.

. . .I heated the pan in the oven, melted the butter in it to coat and added the butter to the mix. Super quick and easy. Give it a try!

made at home along with banana bread.  This one has all the goodies and has to taste great.  Made chili this week and the girls almost went on strike because I din't make cornbread to go with it:-)  Who knew cornbread could be contentious?

. . . one of my favourites in short order. You must make a wicked cornbread if the girls nearly went on strike! Your post reminded me that I haven't made chili for a while and now I am hungry for chilli!  I have a rack of ribs to smoke today and I was going to get a beef cut to smoke as well. Smokey beef chili? Now I am really hungry!

In your hot cast iron pan with your browned butter in the hot pan, sprinkle over the bottom of the pan some yellow corn meal and pour your batter over that, then bake it up as you normally do.  It adds a wonderful corny crunch to the bottom crust.

. . .  by baking such a small quantity -- 1 cup total flour, there is no reason to freeze. Hey even for a single ski bum, this is gone in two days. I then bake it again fresh! Easy!!!
