I did Browndog's Apple Walnut Loaf again. This time I used the recipe's amount of yeast and the other ingredients, except I almost doubled the brown sugar. When I put it in the over it was less than an inch over the rim, so I got a good oven spring. I did the proofing and baking in a Superstone covered baker that I bought on Amazon.com. I proofed with the lid on, but left it off during the baking. With all that oven spring, it would not have fit anyway. Colin

What do you think of the Superstone baker?

I like it. The bread came out well, and I was able to proof the dough in the baker with the lid on. Then I took the lid off for baking. This bread got so much over spring that I couldn't have left the lid on for baking, but I am going to try it with one of the no-knead recipes. I will probably have to keep it down to a recipe with three cups of flour, though.
