re' yeast

I noticed the comments about yeast. I buy yeast at Sams/Wallmart. The price is right, but they come packaged in two one pound packages (that't a lot of yeast!) I have been placing the package in the freezer after opening it, and have had no problems rising bread even after the expiration date.

Location: Pune, India
Flour used : Wheat Flour
Yeast used : Active Dry Yeast [2 months old]
Quantity:
2 Cups of Wheat Flour
1 teaspoon of Active Dry Yeast, dissolved in warm water. Water warmed in the microwave for 20 seconds
Dough consistency is right after kneading

Set the dough out in the sun for 2 hours. Did not see any sizeable "rise". Went ahead and baked it anyways. 200 deg C == 400 deg F for 30 minutes. I get a nice thick crust, but the insides of the bread does not seem to have cooked well.
