How do I make fresh cake yeast, like the brick I can sometimes find?

Very hard to find the bricks of fresh cake yeast, so would like to know how to make my own. Thank you.

culture does for you, provide you with homegrown yeast.

I looked there first, but didnt find what I wanted. I want to be able to make a brick, then cut off what I want, like the cake yeast I buy when I can find it.

But how about going into your local bakery and asking for some? Works where I live.

I get 1 pound bricks from a local bakery. They charge 3.50. I cut it in half and freeze one half and use the the first half within about a month and then use the frozen half after that. It took a few calls before someone was willing to sell single bricks and some bakeries were just plain mean when I asked but well the effort - just gotta hit up the right person :)

In case you do find a source as the link above also suggests calling bakeries etc just want to point out that once its frozen it is incredibly hard like a block of concrete. The first time I tried to chip off a few ozs it broke the knife tip clean off which remained in the block for about a week. Since then I've discovered that you need to saw it (using a bread knife). One other observation and maybe this is just my imagination but anytime I use a freshly thawed quantity it seems to be much more active than the original block. Its almost as though the little yeasties spring back to life with enthusiasm and all that energy had been building up while frozen. Very strange but again maybe just from expecting or assuming it would be less active :\
