Caraway seed and a little rye.

The bread consists of freshly ground white wheat, a little bolted rye and AP with caraway seeds and a bit of honey. It doesn't have enough rye ( about 12% of the flour) to call it deli rye but that was the inspiration. It has a fairly large natural leaven preferment at 70% hydration which is also that of the final dough. Very tasty.

Thanks Ru. Been going back to simpler breads and exploring how different techniques influence taste and texture.

Always wonder how caraway taste like. Does it taste like cumin? guess i just have to try someday.

Love the sounds of the flavour.

Thanks. No it doesn't taste like cumin. It's hard to explain taste but it's kind of like a milder fennel. It is the taste that I grew up identifiing as rye bread before I knew what rye really tastes like. It is worth a try.

bit of whole grains.  Makes for one fine sandwich bread too. No problem eating this one for breakfast, lunch and dinner.

Well done and happy baking STU
