Homemade bread day

This is a favourite in our house . Jeffrey Hamelman's Toast Bread. 1lb 9oz dough in each of two Pullman pans . (enough left over for two rolls) when toasted it is crisp on the outside and soft in the middle - love it !

I did not dare make anything that needed to be slashed for homemade bread day. Still have not mastered this art despite the many lessons and videos . Want to cry every time Alfonso posts his baguettes !

Yum.  I'm no scoring genius, but I usually retard my loaves overnight, and find them easier to cut when cold.  Also use the corner, not the side of the blade.

Thank you Filomatic, I will try that. Will have to clear quite  a space to fit in baguettes !

and pullman loaves and, well, bread!  I don't have any of those lovely "Chicago Metallic" pullman pans with covers, so I never make pullman loaves (yet).  Yours look lovely.

Anyway, to get to the point after the niceties: scoring baguettes was a long-term project which I was willing to put up with to get where I wanted to with them.  It's the story of the "overnight success" who labored 20 years in dingy clubs first.  Well, no dingy clubs and not 20 years either.  But if you want to learn to score, you will have to go in knowing that you will be killing off some loaves in whatever shape for a short while before the results of practicing comes through.  They'll still be tasty.  And they will come through fairly quickly too.  Noticeable differences in a short time span, with the occassiionaly disappointing setback.  But it will happen!

I have few real skills in life.  I can do pushups, take out the garbage and pick up after the dog on walks.  But my skill set with tools is still nearly nil after more than 6 decades since I had my first Fisher Toys tool workbench.  If I can do it, so can just about every one else.

Once more, and I'm well past any embarrassment over it, here is what my early baguettes looked like only a little over 3 years ago.  And they were still tasty...

So...get crackin'!

Alan, thank you so much for your kind words - you made my day !!  The picture of your early baguettes was very comforting as they look just like mine ! Now I know that there is hope for my scoring. 

As for the Pullman pans - they were a present to myself on one of the rare occasions that King Arthur Flour offers free shipping to Canada. I love them and they are used a lot .( maybe I should try a different formula in them just to see what happens ....)
