Are you making Election Cake?

Election Cake is a naturally fermented cake which was served in the early days of the USA on Election Day, which was then a jovial and high-spirited holiday. The "Make America Cake Again" initiative is encouraging commercial bakeries and home bakers to resurrect it in 2016 as part of a Get-Out-The-Vote initiative.

I got a preview from Richard Miscovich at the Maine Grains conference in July and then the tinkered-with version posted to Facebook a few weeks ago. The latter is available in versions for commercial bakeries and home kitchens, and uses a preferment made with sourdough starter or yeast, your choice. It's a not very sweet cake which definitely benefits from some mixed in fruit or liquor and a scoop of ice cream or whipped cream on top. But you're celebrating democracy, so what's not to like?

Sounds like a fun idea. I have never made cake with starter... actually I don't think I have made cake with yeast. Well I guess if you count cinnamon rolls, or the like, I have.
