Question About Pullman Pans

Hello,

I was wondering if a pullman pan can be used without the lid for making regular "domed" loaves, or will the high sides adversely affect the bake?

Your thoughts?

My regular tins are slightly higher sided than the one lidded pullman tin I have...

Using the Pullman pans w/o lids sill give you a taller, narrower loaf but that's about the only difference.  Just make sure that the quantity of dough is appropriate for the size of the pan.
