I'm not sure what the bio in your gut has to do with the wee beasties in your starter but maybe it is the main reason your starter is different than mine.  Maybe I can ship them Lucy too since her gut bios would be as important as mine to these wee beasties but she hates road trips:-(  Also seems like a lot of muss and fuss for a No Muss No Fuss starter:-)

dabrownman:  The starter I am using now is the one I rescued using my gluten-free starter and converting it to gluten with rye, ww and white flour.  It is going gangbusters now.  Would be interesting to understand the bio of that as well as my own....sure wish I could eat the good bread!  Understand Lucy's reluctance to travel, though...Best,  Phyllis
