Bread Explosions

Hello,

i am having issues with these styles of bread explosions happening on breads sitting on the window side (front) of my decks, specifically one (third from top) even though it has the same settings as others. Am not sure if this is happening because the breads are too close from the glass window (change of temp) but since it mainly happens on one specific deck, am not sure.. Any idea? Any suggestions?

Normally means under proofed. But you say it's only happening where it's placed in the oven, while I still think the proofing should be looked at, I'd hypothesise an uneven oven temperature and your bread is crusting over too quickly around the sides and the only place where the gas can escape is through the weakest point where you see it 'exploding'. You may need to find ways to stop this from happening.

thanks for this. Yes, only happens on the front row on the same deck, and have about 2 min detween loading 2 decks, so dont think it can be that some are proofing longer than others. i had the same issue with under proofed loaves but i dont think it is the same issue here..

So one end of the bread crusts over quickly while the other carries on with the oven spring. Always get a slightly uneven loaf. Best way around this is a dutch oven.

Your bread still looks great! And I always say that a little runaway oven spring is better than no oven spring and as long as it tastes good.

1) check your oven after you look and see if the fans and heating elements are all running properly.  

2)  Are these loaves coincidently the first ones loaded and the last ones shaped?  Do they need more time proofing?  Try mixing up the loading order and see if it changes.  

3) perhaps the door is not closing properly.   Vacuum crumbs out of door seal surfaces.

yes, checked it all. by looking at how much steams comes out of the deck compared to others i think it is a steam issue. will vaccum the door but it seems to be closing fine..

nozzle. or whatever, sieve or something on the "line"  ???

Seams like whenever something to do with water isn't working, the first thing I'm unscrewing are the sieves and cleaning them.  Works 99.9% of the time.
